Description

Smith Meadows is a free-range family run farm one hour west of Washington D.C. in Berryville, VA. The Pritchard family uses sustainable and organic methods to raise beef cattle, pigs, laying hens, sheep, and goats on a 350 acre farm in Clarke County at the top of the Shenandoah Valley.

We bring a variety of products to farmers' markets in the D.C. metropolitan area. These products include free-range eggs and meats, hand-made pastas and fresh apple sauce in season. The farm is also home to Smithfield Farm Bed & Breakfast-- a small inn renowned for its historical setting and gourmet breakfasts made with quality foods and ingredients from our farm and other local producers. 

Internship starts: October or Fall 2005

Work/Experience Desired: 

If you are interested in sustainable agriculture and making gourmet foods with sustainably grown products please apply. Experience in a kitchen or restaurant is preferable, but not necessary.

Education Opportunity:

Learn how to apply principles of sustainable, free-range farming to gourmet food production. Become familiar with the mechanics of agro tourism. gain experience in direct marketing through selling at farmers' markets and on the farm.

Stipend/Compensation: on site housing & $700/month stipend;  1 meal per market day provided. 

Work as an intern/apprentice at producing and selling handmade pasta, and help run a family based organic farm 

Pasta Making Includes: 

1) Ingredient Prep - Washing and boxing eggs from chickens on our farm/cleaning and processing vegetables, spices and cheese for future pasta making
2) Dough Prep - making dough according to specific recipes. Recipes are in a folder in the pasta kitchen.
3) Making Pasta - cutting, weighing, and packaging noodles
4) Making Ravioli - making and stuffing fillings, packaging ravioli's
5) Labels - Printing out labels for various flavors of the week Writing the expiration and weight.
6) Clean-Up - includes washing all utensils in the sink or the dishwasher, vacuuming the floor, cleaning the machines and countertops, and placing all used linens in the laundry. 

Farmers' Market Duty includes:

1) Packing and preparing products and displays for markets
2) Travel to markets
3) Set up and take down at market
4) Sell our unique products with enthusiasm and a desire to share sustainable food production.
